You can’t miss it and you definitely shouldn’t.  It’s the little bright yellow house in the shade of the sapodilla and mango trees overlooking Bottle Creek on the island of North Caicos.  It is why owners Howard and Cheryl Gibbs light heartedly called it the Last Chance since it is the last chance to enjoy a meal and drink before travelling over to Middle Caicos.


A visit to North Caicos is always a treasured experience; rich in history; scenic with glimpses of what life is like in the unspoiled out islands.  The people are always friendly and welcoming.  A visit may include a stop at Wades Green, Three Mary Cays or Cottage Pond. Or it may begin with a visit to Middle Caicos to see Dragon Cay, Mudjen Harbor, the caves and then a swing back to North Caicos.  But you should try and make it a point to drop by Last Chance.  It is one of those charming walk in and sit yourselve down kind of places.  The view out the back is spectacular as Last Chance sits right by the ledge overlooking Bottle Creek.



Howard’s restaurant philosophy is a simple one; “I enjoy cooking; and I like to see people come and enjoy themselves.”  The two most popular luncheon favorites at Last Chance are the specially seasoned, handpacked hamburger (or cheeseburger) and the fish sandwich. The fish, delicately flavored is sauteed in lemon, butter and wine and even people who don't hardly ever eat fish have loved it.

Conch is also a recommended choice.  Howard’s conch fritters are decidedly different.  He has his own recipe for making them.  Lots of tender conch in a light, tasty batter.  His conch entree is prepared slightly different, sauteed rather than fried.  Equally good.

A few other highly recommended items are the cocont muffins, cream of crab soup and the Bahamian macaroni and cheese with fresh greens salad.  And if you have a sweet tooth, don't forget to try a home baked dessert before you leave.

When Howard is not in the kitchen, you may find him on Last Chance's front porch tying fishing flies, or he may be out fishing on Bottle Creek.  He occasionally takes out a bone fishing charter on his back country skiff.  If you are thinking about getting out on the water yourself, kayak rentals and boating charters can also be arranged at Last Chance.  That idea is really worth considering since the water here is beautiful, clear and so invitingly warm.

So, if you are headed to North Caicos, by all means stop at the Last Chance for lunch, a cold drink or a snack.  The view itself of Bottle Creek is worth coming for.  Last Chance is a colorful little place, friendly and interesting.  You'll know what I mean when you stop by.
